Wholemeal sweet potato muffins with muesli and chocolate

Once upon a time muffins were small, so small they could be eaten in one bite, they only existed in England.

It is there, in 1703, that we find the word "muffin" mentioned for the first time. Word that seems to come from the French "moufflet" which indicates a very soft bread, or perhaps from the German "mold" which is instead a kind of cake.

The Italian - the gourmet club offers a variant with sweet potatoes and the special Calcagno 1946 chocolate, the historic Turin chocolate brand.

Ingredients

  • wholemeal spelled flour - 115 grams
  • white spelled flour - 115 grams
  • sweet potatoes (steamed) - 200 grams (weighed cooked)
  • CALCAGNO spreadable chocolate - 4 tbsp
  • crispy oatmeal meusli - 4 tbsp
  • panela (brown cane sugar) - 175 grams
  • oat milk - 180 ml
  • sunflower oil - 120 ml
  • ground flax seeds - 2 tsp
  • cinnamon - 1 tsp
  • whole salt - ½ tsp
  • baking soda - ½ tsp

Preparation

After cooking the sweet potatoes in the steamer, weigh 200 grams and mash them with a fork. In a bowl pour the oil, milk, mashed potatoes. Mix and set aside.
In a second bowl pour the two flours, sugar, chocolate chips, ground flax seeds, ground cinnamon, salt and baking soda. Stir with a fork.
Pour the liquid ingredients into the bowl of dry ingredients and mix for a couple of minutes until a creamy dough is obtained.
Turn on the oven at 180 °. Pour the mixture into the cups, almost to the brim, and pour a little crunchy granola on each raw muffin. Bake for about 40 minutes. When the muffins are cooked, let them cool completely at room temperature.
