TOMATO BACON PASTA WITH ITALIAN GUANCIALE

Tomato Bacon Pasta with Guanciale is a quintessential example of how to make a quick and easy pasta recipe.

250 g yellow cherry tomatoes
100 g Guanciale Salumificio La Vigna
350 g Pasta
q.s. Parmesan Cheese
q.s. Extra virgin olive oil
q.s. Basil
q.s. salt
q.s. Rosemary (optional)
1 clove of gar

Preparation


Boil the yet salted water for the pasta. Wash the yellow cherry tomatoes well and cut them into small pieces. Pour the extra virgin olive oil into a pan, brown the garlic clove and add the cherry tomatoes, salt and some basil leaves. Sauté them on a high flame for a few minutes, when they are soft, remove them from the heat and keep them aside. Cut the speck into strips, (I took a thick slice) and brown it in a separate pan with a little extra virgin olive oil, when the speck has become crunchy add it to the yellow datterini sauce, add the rosemary and mix, the our dressing is ready. To cook pasta, I preferred spaghetti with this dressing, but you can choose any format.
